He took such good care of me while GF Guy was out on the Rock of Ages tour last year. He slept with me, woke me up in the mornings, cuddled with me when I was lonely. He became <span style="color: red; font-size: large;">my boyfriend and protector</span> while my husband was away.</div>

My only comfort is knowing the Dickens is keeping him company. The road can be such a lonely place. At least I get to come home to my own bed on the weekends. GF Guy, on the other hand, will be living in hotels for the foreseeable future. He probably needs our puppy more than I do.</div>

This weekend, I put together a little care package for my baby/puppy. Included were homemade gluten-free dog treats. I used ingredients I had on hand to create a healthy treat that a human could "technically" eat if he or she wanted to. Personally, I don't think I would be a huge fan of the beef stock/peanut butter combo... But, hey... To each his own!</div>

<b>Ingredients:</b><br />
<ul>
<li>1/2 cup certified Gluten-Free Old-Fashioned Rolled Oats</li>
<li>2 Tbsp Olive Oil</li>
<li>1/2 cup boiling Beef Broth, made from Bouillon Granules</li>
<li>1 tsp Organic Sugar</li>
<li>1 tsp Beef Bouillon Granules</li>
<li>1/4 cup Water</li>
<li>1/4 cup Peanut Butter</li>
<li>1 1/2 tsp Flax Meal mixed with 1 1/2 Tbsp Hot Water</li>
<li>1 1/2 cups Brown Rice Flour, plus more for dusting</li>
</ul>
<b>Directions:</b><br />
<ol>
<li>Preheat your oven to 400 degrees F. (425 degrees F for high altitude)</li>
<li>In a large glass bowl, combine the oats, olive oil, and boiling beef broth. Let sit for 10 minutes.</li>
<li>Add sugar, beef bouillon, water, peanut butter, and flax meal mixture to the oats and stir until thoroughly combined.</li>
<li>Add the brown rice flour, 1/4 cup at a time, until dough comes together to form a mold-able ball.</li>
<li> Dust a glass cutting board with extra brown rice flour and place dough in the center of the cutting board. Lightly dust dough and rolling pin with brown rice flour.</li>
<li>Roll out dough to about 1/4" thickness.</li>
<li>Using a bone shaped cookie cutter, cut out dog treats and place on a foil lined baking sheet.</li>
<li>Bake in preheated oven for 15 minutes.</li>
<li>Cool completely on a cooling rack before storing in an airtight container.</li>

Believe it or not, until today, I had never boiled an egg. Don't get me wrong. I love a good hard boiled egg. They make a great, protein packed snack or breakfast on the go. I just never had to boil them myself. </div>

Then there is the matter of my cholesterol. Genetically, I have borderline high cholesterol. The first time I found this out, I was shocked. <b style="color: red;"><i>Are you kidding me? I eat healthier than 99% of the population, and I have borderline high cholesterol?! Thanks a lot, Dad.... </i></b>That begs the question, should I even be eating hard boiled eggs in the first place? Aren't eggs suppose to be bad for cholesterol challenged individuals like me? I thought they were "incredible"....</div>

Anyway, back to my hard boiled eggs. I used an unconventional method and was shocked at my success. Perfect hard boiled eggs with no cracking or leaky egg whites. I did accidentally drop one, but it ended up working out. How else would I know if the eggs were cooked properly?! Here is the method I used:</div>

<ol>
<li>Place eggs in a single layer in the bottom of a saucepan.</li>
<li>Add cold water until eggs are covered by at least 1 inch of water.</li>
<li>Bring eggs and water to a boil. Once water is boiling, remove from heat for 10 seconds while you reduce the burner to low heat.</li>
<li>Place the eggs back on the burner and cook on low for 1 minute.</li>
<li>Remove the eggs from the heat, cover with a lid, and let sit for 12-15 minutes.</li>
<li>Drain hot water and rinse with cold water until cooled.</li>
<li>Place eggs in a covered bowl in the refrigerator until ready to dye or eat.</li>

I made myself take a shower and run errands. I contacted the director of the show GF Guy was working on here in Colorado, before he left, and was able to go see a performance of that show, called <i style="color: blue;"><span style="font-size: large;"><a href="http://www.magicmomentsinc.org/"><b>Magic Moments</b></a></span></i>. Magic Moments was a delight! <span style="font-size: large;">Picture a review style show with actors ranging from ages 4 to 64, some in wheel chairs, some with Down Syndrome, some with Cerebral Palsy... </span>It was completely and utterly inspiring and humbling, and just what I needed to gain some perspective. </div>

<li>Heat a skillet over medium-high heat.</li>
<li>Spray skillet with non-stick cooking spray and saute' broccoli until just tender.</li>
<li>Add peas and cook until heated through.</li>
<li>Next, add the cooked quinoa and cook about 1 minute.</li>
<li>Move all ingredients toward the outside of the skillet, forming a hole in the center.</li>
<li>Crack the egg into the center of the skillet and lightly scramble to break the yolk.</li>
<li>Gently stir the egg until it begins to cook. Gently fold into the other ingredients.</li>
<li>Add the salsa and Daiya cheese and cook until cheese in melted and salsa in heated through.</li>

I spotted this recipe a while back and was struck by the wonderful array of flavors. </span></span></span><br />

The recipes I found online were super complicated and called for obscure ingredients like White Miso Paste and Egg Replacer. While I have been known to cook with White Miso in the past, I didn't have any on hand. Instead, I came up with my own recipe, and it is a darn good substitute!</span></span></span><br />

<li>1/4 cup Daiya Vegan mozzarella cheese</li>
<li>1/4 cup Nutritional Yeast Flakes</li>
<li>crumbed bacon, if desired </li>
</ul>
<b>Directions:</b><br />
<ol>
<li>Preheat oven to 400 degrees F.</li>
<li>Place squash on a baking sheet and toss with olive oil, salt, pepper, and nutmeg.</li>
<li>Place in oven and roast for 40 minutes, stirring half way through, until soft.</li>
<li>Pour roasted squash into a bowl and mash using a fork.</li>
<li>Reduce the oven temperature to 350 degrees F.</li>
<li>Meanwhile, cook pasta according to package instructions, drain, return to the pot, cover, and set aside.</li>
<li>Melt
the Earth Balance in a saute' pan over medium-high heat. Add the shallot and
saute' until the Earth Balance begins to brown. Add the brown rice flour and cook 1-2
minutes more.</li>
<li>Add the mashed squash, vegan mascarpone, and almond milk. Stir until well combined and heated through.</li>
<li>Add the spinach and sauce to the cooked pasta in the pot and toss until evenly coated.</li>
<li>Spray a 9" glass baking dish with non-stick cooking spray.</li>
<li>Pour the pasta into the prepared dish and top with Daiya Mozzarella and Nutritional Yeast.</li>
<li>Bake in 350 degree oven for 20-25 minutes, until cheese is melted and bubbly.</li>
<li>Serve topped with crumbled bacon, if desired. </li>

<li>1 large Tomato, cut into 1/4" thick slices</li>
<li>1/4 cup fresh Cilantro, chopped</li>
<li>5 large Eggs</li>
<li>1/2 cup Unsweetened, Plain Almond Milk</li>
<li>1/4 cup Water</li>
<li>1 Tbsp Vegan Sour Cream</li>
<li>1/4 tsp Hot Sauce</li>
<li>1/2 cup Daiya Vegan Mozzarella Cheese </li>
<li>Salt & Pepper </li>
</ul>
<b>Directions:</b><br />
<ol>
<li>Spray an 8x8 baking dish with non-stick cooking spray.</li>
<li>Place sliced Cilantro Quick Bread in a single layer in the bottom of the dish.</li>
<li>Top sliced bread with sliced tomato.</li>
<li>Sprinkle chopped cilantro over top the tomato.</li>
<li>In a large bowl, whisk together the remaining ingredients until well combined.</li>
<li>Pour egg mixture evenly into the baking dish over top the bread & tomato.</li>
<li>Cover and refrigerate over night, or a minimum of 3 hours.</li>
<li>The next day, preheat your oven to 350 degrees F. (375 degrees F for high altitude)</li>
<li>Bake egg casserole, uncovered for 40-50 minutes until puffy and golden.</li>

I have been seeing Risotto all over the blog-o-sphere lately. That got me thinking. It has been literally over a year since I have made Risotto. That travesty had to be rectified, and quickly! </div>

Some people hate standing over the stove for the 45 minutes plus that it takes to make Risotto. The constant stirring drives them mad. Me? I find it therapeutic. You don't have to think or rush around. You are forced to simply stand and stir. <span style="font-size: large;">For a busy, buzzy, little person like myself, this is a form of meditation, and a delicious one, at that!</span></div>

<li>1 cup Vegetable Broth</li>
<li>2 1/2 cups Chicken Broth</li>
<li>1 Tomato, chopped </li>
<li>1 Tbsp Olive Oil</li>
<li>1/2 Yellow Onion, finely chopped</li>
<li>4 cloves Garlic, minced</li>
<li>1/2 cup Dry Sherry</li>
<li>1 cup Quinoa</li>
<li>3 links cooked Gluten-Free, All-Natural Spinach & Garlic Chicken Sausage, sliced into 1/4" thick rounds</li>
<li>2 tsp dried Parsley</li>
<li>1 tsp dried Rosemary </li>
<li>1 bag Baby Spinach</li>
<li>1/4 cup Nutritional Yeast Flakes</li>
<li>Salt & Black Pepper, to taste</li>
</ul>
<b>Directions:</b><br />
<ol>
<li>In a small saucepan, combine vegetable broth, chicken broth, and chopped tomato. Bring to a simmer.</li>
<li>In a larger pot, heat oil. Saute' onion until translucent. Add garlic and cook about 30 seconds more. </li>
<li>Pour the quinoa into the pot with the onion and lightly toast it, about 1 minute.</li>
<li>Deglaze the pot with the dry sherry, stirring until absorbed.</li>
<li>Reduce heat to medium low.</li>
<li>Stirring constantly, add the broth mixture 1/2 cup at a time. Stir until broth is absorbed before adding more.</li>
<li>When you are down to about 1/2 cup of broth remaining, add the sliced chicken sausage, herbs, 3/4 bag of spinach, nutritional yeast, salt, & pepper. </li>
<li>Add the remaining broth, and cook until absorbed and all ingredients are heated through.</li>
<li>Serve over remaining spinach.</li>

It is his absolute favorite dinner, and he gets very offended when people don't like it! (...which has actually never happened. People have refused to try it, but have never disliked it once they do.) Anyway, I was going to make cornbread to go with our chili, but the grocery store I went to didn't carry any <span style="font-size: large;"><i>"Celiac-Safe" </i>Cornmeal</span>. As tempted as I was to just buy the Quaker Cornmeal, I knew it was not a good idea. <span style="font-size: large;">On to plan B</span>! I used the ingredients I had on hand to make a delicious quick bread that paired perfectly with the chili! This recipe makes 3 small loaves. We only ate one, and I can't wait to use the other 2 for a recipe I have floating around in my head. Enjoy!</div>

<li>Preheat your oven to 350 degrees F. Spray 3 mini-loaf pans with non-stick cooking spray.</li>

For the past few days, I have been tossing around the idea of making Blueberry Donuts. Then, GF Guy arrived home from rehearsal with a special request from one of his coworkers for a Blueberry Donut recipe. <span style="color: red; font-size: large;">Fate? I think so!</span></div>

For those of you who do not have a Donut Pan, all of my donut recipes can easily be made in a Muffin Pan. <span style="font-size: large;">After all, baked donuts are basically muffins in a fun shape. </span></div>

Personally, I found these to be a bit on the sweet side, probably because I increased the amount of sugar I normally use from 1/4 cup to 1/3 cup. Don't ask me why I did it. <li>1/2 cup Gluten-Free Oat Flour</li>
<li>1/4 cup White Rice Flour</li>
<li>1/4 cup Cornstarch</li>
<li>1 tsp Baking Powder</li>
<li>1/2 tsp Xanthum Gum</li>
<li>1/4 tsp Baking Soda</li>
<li>1/2 cup Blueberries</li>
</ul>
<b>Directions:</b><br />
<ol>
<li>Preheat oven to 325 degrees F. <i>(350 degrees for high altitude) </i>Spray a donut pan with nonstick cooking spray.</li>
<li>In a large bowl, whisk together the egg, oil, sugar, almond milk, and vanilla until smooth.</li>
<li>Add remaining ingredients, except blueberries, and stir until smooth.</li>
<li>Gently fold in the blueberries.</li>
<li>Scoop 2 heaping Tbsp of batter for each donut. </li>
<li>Bake 9-10 minutes, then cool 5 minutes in the pan before transferring to a cooling rack.</li>
<li>Cool completely before dipping in glaze <i>(recipe below)</i>. </li>

<b>Directions:</b><br />

<li>Melt Earth Balance in a large skillet over medium-high heat.</li>
<li>Add oregano, cumin, & chili powder and cook 1 minute until fragrant.</li>
<li>Saute' onion & celery in the spice mixture until onion is soft and translucent. </li>
<li>Add carrots and cook until just soft.</li>
<li>Add garlic and cook 30 seconds.</li>
<li>Add tomatoes and vegetable broth. Cook until tomatoes begin to break down.</li>
<li>Stir in maple syrup, liquid smoke, hot sauce, and kidney beans. Cook 3 minutes.</li>
<li>Add spinach and cook until wilted.</li>
<li>Season with herbamare and white pepper.</li>
<li>Reduce heat to low and simmer 10 minutes.</li>
<li>Serve over rice or quinoa and fresh spinach. Garnish with cilantro.</li>

<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Slowly beat the dry mix into the liquid until just combined.</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">If batter is too thick, add almond milk, 1 Tbsp at a time. (I added 2 Tbsp, but am cooking at a high altitude, requiring more liquid)</li>
<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">Pour batter into prepared baking pan and smooth with a spatula.</li>
<li>Bake in preheated oven for 15-20 minutes, until a toothpick inserted in the center comes out clean. </li>

<li>2 over-ripe Bananas, mashed</li>
<li>1 large Egg, beaten</li>
<li>3 Tbsp Unsweetened, Plain Almond Milk (4 Tbsp if at a high altitude)</li>
<li>1 Tbsp Olive Oil</li>
<li>1 tsp Vanilla Extract</li>
<li>1/4 cup Organic, Unbleached Sugar</li>
<li>3/4 tsp Cinnamon</li>
<li>1/2 cup Gluten-Free Oat Flour</li>
<li>1/2 cup Cornstarch</li>
<li>1 tsp Baking Powder</li>
<li>1/4 tsp Baking Soda</li>
<li>1/2 tsp Xanthum Gum</li>
</ul>
<b>Directions:</b><br />
<ol>
<li>Preheat oven to 350 degrees F (375 degrees for high altitude), and spray a donut pan with non-stick cooking spray.</li>
<li>In a medium bowl, whisk together the banana, egg, almond milk, sugar, vanilla, cinnamon and oil.</li>
<li>Add the remaining ingredients and stir until smooth.</li>
<li>Scoop 2 heaping Tbsp of batter for each donut. Dampen your fingers to smooth donuts evenly in the pan.</li>
<li>Bake 7-9 minutes, then cool 5 minutes in the pan before transferring to a cooling rack.</li>
<li>Cool completely before dipping in glaze <i>(recipe below)</i>. </li>

<li>pure Maple Syrup, warmed for serving</li>

<b>Directions:</b><br />
<ol>
<li>Preheat oven to 375 degrees F. (400 degrees for high altitude)</li>
<li>In a measuring cup, combine the almond milk, egg, agave, vanilla, and salt. Pour into a shallow 8x8 pan.</li>
<li>Soak bread in the almond milk mixture, 30 seconds per side.</li>
<li>Meanwhile, melt butter substitute in a large skillet over medium heat.</li>
<li>Toast bread in the skillet until desired doneness, about 4-5 minutes per side.</li>
<li>Place toasted bread directly on the rack in your preheated oven, and cook about 5 minutes longer.</li>
<li>Serve with warm maple syrup.</li>

<span style="font-size: large;">Once a week, our local Whole Foods has a one-day sale. </span>Usually, the featured item is some sort of cut of meat. GF Guy and I, like many of you, are on a budget. In order to eat high quality, organic foods, we keep a close eye on the sales and plan our meals accordingly. This week, split chicken breasts were majorly discounted so we stocked up. </div>

I got all kinds of<span style="font-size: large;"> up close and personal</span> with the chicken breasts as I taught myself how to debone and skin them. It took a little courage, but, in the end, it wasn't that difficult, and the savings made the extra effort well <span style="font-size: large;">worth it</span>!<br />

On a fun note, GF Guy and I had a <span style="font-size: large;">"down-home" adventure day</span> yesterday. We drove to Golden, CO and toured the <span style="font-size: large;">Miller-Coors Brewery</span>. I didn't get to taste or touch anything, but had a great time learning about the brewing process. </div>

<li>Preheat oven to 350 degrees F, and spray a donut pan with non-stick cooking spray.</li>
<li>In a medium bowl, whisk together the egg, almond milk, sugar, vanilla, and oil.</li>
<li>Add the remaining ingredients and stir until smooth.</li>
<li>Scoop 2 heaping Tbsp of batter for each donut. Dampen your fingers to smooth donuts evenly in the pan.</li>
<li>Bake 7-9 minutes, then cool 5 minutes in the pan before transferring to a cooling rack.</li>
<li>Cool completely before dipping in glaze <i>(recipe below)</i>. </li>

One of my favorite things about being married is getting to spoil my husband by baking his favorite things. It has been awhile since I last baked for especially for him. In fact, I can't remember the last time.... Luckily, I was able to amend that problem.</div>

I know I have posted a half dozen Banana Bread recipes on this blog, and no two are alike. I can't help it! I have a hard time sticking to recipes, especially when sticking to a recipe means having to go to the grocery store. Instead, make do with what ingredients I have. I have been baking gluten-free and dairy-free for long enough now that I can tell, based on a batters consistency if it will turn out or not. Surprisingly, I find baking at high altitude to be easier than baking in moisture laden Florida. <em>(shrug)</em> Maybe it's easier... or maybe I'm just happier... <span style="color: #cc0000; font-size: large;">Happiness and love, after all, are always the best ingredients!</span></div>

<li>4 over-ripe Bananas, mashed</li>
<li>2 large Eggs</li>
<li>3/4 cup Cornstarch</li>
<li> 2 Tbsp Almond Milk</li>
<li>1 tsp Vanilla Extract</li>
<li>2 tsp Cinnamon</li>

<li>Beat together oil and agave nectar at high speed for 2 minutes.</li>
<li>Add white rice flour, oat flour, xantum gum, baking powder, baking soda, and salt. Beat on low until blended, then on high for 2 minutes.</li>
<li>Add remaing ingredients and beat until well blended.</li>
<li>Pour batter into a loaf pan sprayed with non-stick baking spray.</li>
<li>Bake 50-60 minutes, until a knife or toothpick inserted near the center comes out clean.</li>

<li>2 Tbsp Dry Sherry</li>
<li>1 Green Bell Pepper, jullienned</li>
<li>1/2 large Sweet Onion, jullienned</li>
<li>1/2 a head of Green Leaf Lettuce, chopped</li>
<li>1/2 a Tomato, chopped</li>
<li>1/2 an Avocado, chopped</li>
<li>Hot Sauce</li>
<li>Fresh Salsa</li>
<li>Daiya Vegan Cheddar Cheese</li>
<li>Vegan Gourmet Sour Cream</li>
</ul>
<strong>Directions:</strong><br />

<li>Sprinkle taco seasoning over chicken strips and coat completely.</li>
<li>Heat oil in a large skillet over medium-high heat.</li>
<li>Cook chicken until cooked through. Put chicken on a plate and set aside.</li>
<li>Add the dry sherry to the same skillet and deglaze the pan, scraping up all the charred bits.</li>
<li>Once sherry has cooked down, reduce the heat to medium, add the onion and pepper and saute' until soft and golden.</li>
<li>Build your salad: lettuce, onions and peppers, chicken, hot sauce, tomato, avocado, cheese, salsa, sour cream. </li>

Just lately, it has been glorious chocolate that has been the object of my nightly cravings. Just one chocolate chip cookie... Is that too much to ask?
