So, we made it to our hotel in North Carolina, and I have internet again! YAY!!! I had Rice Chex for breakfast, and my usual bus salad (Romaine, Carrots, Broccoli, Cauliflower, Tuna, and Balsamic Vinegar) for lunch:

I also sipped the 2nd half of my Multi-Green Kombucha from yesterday.

I had 2, count em', 2 or these explode on my yesterday! Talk about special times! The second explosion happened in our hotel room. My OH was in the bathroom, when suddenly he heard me screaming in the bedroom for help. He can rushing out to find me huddled in a corner with an exploding bottle of green slush wrapped in a towel desperately trying to "make it stop"! HAHAHA It was definitely one of my finer moments. Moving on.... Once we arrived at the hotel, I ate an orange

and hopped online to check my email, etc.... Online, I found my OH had been posting old pictures on facebook. Some of these photos were from right around the time of my diagnosis. I looked positively disgusting! I was so skinny! It kind of makes me sad to look back at these photos and realize what I lost. I lost those years of my life, the memories that could have been made, the friendships I could have cultivated, the things I could have done. On the flip side, it also makes me grateful; grateful to my husband and family for sticking by my side and never giving up on me, grateful that to God for keeping me alive, grateful for the new mission I have in life and for the compassion for others it has given me. Those years changed me for the better. I can see that now, and I thank God for it. Here are the some before and after shots. It's amazing what 2 years and a diagnosis can do!

For anyone reading this who is struggling with a Gluten Intolerance or Celiac's Disease, know that there is hope. Healing will come. I am LIVING proof!
