Beans and Beautiful Weather...

Hello from gorgeous Columbia, SC! The weather has been absolutely G-ORGEOUS! I have been soaking up the sun as much as I possibly can. (Wearing a ton of SPF of course!) We don't have free internet at the hotel. So, I am going to blog as much as I can here at the theater. Yesterday, when we arrived, I made my usual salad of Tuna, Romaine, Broccoli, Carrots, and Balsamic Vinegar. I was too hungry to go hunting for other food. I also had an apple. I ate dinner in a rush at the theater. Nothing too exciting or colorful, just a Dr. McDougall's Pad Thai soup cup. I didn't have time to take a picture. It was seriously an "inhale and go" kind of meal. Back at the hotel after the show, I did have something delectable and colorful, a Plain 0% Chobani with fresh local Blueberries and Strawberries. I know it's hard, but please try to stop drooling! It's just soooo pretty!!!!! Now, moving on to today...
I ate a quick bowl of Rice Chex this morning then hopped in the shower. One of the dancers, "L", and I went to a natural foods store here in Columbia called Rosewood Market. It was A-MAZING! They even had Cream Hill Estates Laura's GF Rolled Oats!!!! I have NEVER seen them in an actual store. I always have to order them online! Naturally, I bought a box as well as a few other goodies for lunch and dinner. I was so excited about both meals I forgot to take pictures until I was half way through with both! HAHA Here is my lunch: A crustless Spinach and Red Pepper Quiche and an Organic, Golden Delicious Apple. YUM!!!!!!!!! After lunch my OH and I walked around the city for a little bit, just enjoying the weather. Dinner was every bit as delectable as lunch. Giant White Beans and Basil in a fresh Tomato Sauce, Steamed Kale, Carrots, Cabbage, and Fennel, and a few Sami's Bakery Garlic Millet and Flax Chips. I dipped the Millet and Flax Chips in the White Bean dish... SOOO FLIPPING GOOD! I will definitely be recreating this dish at home. On a separate note: I know a lot of people have a problem with Sami's Bakery products because of cross-contamination. I have only had a problem once, and it was with their Millet and Flax Bread. I have never had a problem with their Millet and Flax Chips. I try not to eat them very often though, just in case. Today, however, I decided to risk it. Luckily, this batch seems to be fine. It was a lovely day spent with my husband and with beautiful food. LE SIGH!... happiness.... Tomorrow we head back to North Carolina, Morganton to be exact, for a one-nighter, then on to Atlanta for the weekend. See you on the flip side!
